From the vineyard to the still
The genesis of Kentaurus: exceptional viticulture, ancestral copper and the art of time, on the shores of Herradura Bay
A moment from the city, the great heritage of Pisco finds its destination facing the Pacific.
The vineyard
It all begins with the vine. Guided by the ancestral structure of the Spanish Parronal and regulated with drop-by-drop precision, the plant yields its purest expression. A unique origin that gives life to the elegance of Moscatel Rosado in Kentaurus and the character of Pedro Jiménez and Torontel in Toliman.
Every spring
The vine awakens: new buds and flowering clusters under a clear sky. Everything that follows depends on this cycle.
The harvest
Every harvest is a decision of precision. We set the date according to ripeness, health and aromatic power, and each bunch is selected by hand: healthy, lively fruit, ready to express its full potential.
The still
Inherited copper and the nobility of time. These Charentais stills, descended from the great Cognac tradition where they produced base spirits for Rémy Martin, now find their second act of excellence in Guayacán. In every drop lies artisanal precision. Historic pieces of metalwork, such as this refined copper alcoholmeter holder, capture the subtle thread of the spirit as it is born, revealing the perfect strength in an intact ceremony of mastery, patience and winemaking savoir-faire.
The distillery
On the remains of the historic Urmeneta Foundry of 1856, in Guayacán, centuries-old stone and steel come together to shelter the very essence of our distillation. In this hall where the past comes alive, the copper stills raise their reddish gleam, sheltered by walls of ancestral rock, just metres from the Pacific Ocean.
Here, the sea breeze and the unique character of the land converge in the birth of a collector's piece. It is not just distillation; it is the flawless meeting of historical and industrial heritage, untamed nature and the art of creating an exceptional pisco by the sea.
Live the experience
Just moments from the urban pulse of Coquimbo, history and mastery gather on the shores of the Pacific. We invite you to discover a private guided tour: a sensory immersion through the pure elegance of our pisco and the deep complexity of our fortified wine, served where high distillation finds its origin.
